- 1 1/2 oz Cachaça
- 1 oz Honey syrup
- 3/4 oz Lemon juice
- 1/2 oz Grapefruit juice
- 1/2 oz Peychaud's bitters
Shake hard with ice, then strain.
Coupe.
Taste
An ounce and a half of cachaça, a full ounce of honey syrup, three-quarters lemon, half an ounce of grapefruit. Half an ounce of Peychaud's runs anise and cherry through the sour. Shaken, coupe. Cane, honey, and a lot of bitters.
History
Brett Adams and Jacob Grier print Pey-Lé in Raising the Bar (2022): an ounce and a half of cachaça, an ounce of honey syrup, three-quarters lemon, half an ounce of grapefruit, and half an ounce of Peychaud's, shaken, coupe. The name is the bitters. No drink of this name is in the manuals before 1970. That pour is the one here, the half ounce of Peychaud's included.
