Two ounces of light rum, half an ounce of maraschino, half of grapefruit, three-quarters of lime. The maraschino is all the sugar there is, so it runs dry, with cherry pit sitting under the citrus. Grapefruit puts pith and a slow bitterness on top of the lime's acid. Shaken hard and strained into a coupe.

History

Constantino Ribalaigua Vert, head bartender at El Floridita in Havana, mixed this for Ernest Hemingway in the early 1930s, after Hemingway tried the house frozen Daiquiri and asked for it without sugar and with double the rum. Hemingway had haemochromatosis, an inherited condition he shared with his father, which is the usual explanation offered for the aversion to sugar. The first version was rum and lime and nothing else. Antonio Meilan, Ribalaigua's successor as head bartender, added the maraschino and the grapefruit later, and the name moved from Daiquiri Like Papa to Papa Doble to Hemingway Special. This menu pours two ounces of light rum, half an ounce of maraschino, half of grapefruit, and three-quarters of lime, shaken, coupe.
