Aged Rum, shaken
Ace of Clubs
Barline 2,1,Q,c
The code is the shorthand off my printed menu; the Key tab decodes every letter.
- 2 oz Aged rum
- 1 oz Crème de cacao
- 3/4 oz Lime juice
Shake hard with ice, then strain.
Coupe.
Taste
Two ounces of aged rum, a full ounce of crème de cacao, three-quarters of lime. At a full ounce the chocolate stands up to the rum; the lime cuts it. Shaken, coupe. A Daiquiri with cacao in the sugar slot.
History
Esquire printed the Ace of Clubs in April 1939, as the house cocktail of a midtown Manhattan restaurant of that name, where Egidio Archimede Dellamazzacane, Eddie, took over the bar in 1938. David Wondrich reprints two ounces of golden rum, crème de cacao, and lime. The original used a full ounce of cacao; Wondrich cuts it. This menu keeps two ounces of aged rum and three-quarters of lime, and it pours the full ounce of cacao.
