Taste

Two ounces of mezcal against three-quarters each of orange liqueur and lime. The mezcal is the drink; the orange and lime are equal and small, peel and acid around smoke. Shaken, rocks, no ice, salt rim. Short, same pour as the Margarita, different bottle.

History

The Margarita's three ingredients take mezcal as readily as tequila. Difford's and later books print a Mezcal Margarita as the same sour with the agave swapped. This menu keeps the house Margarita's two ounces of spirit and three-quarters each of orange liqueur and lime, and it pours it in a salt-rimmed rocks glass with no ice, as the recipe that landed here specified.
