Fancy Cocktail

- 1 1/2 oz Bourbon
- 1/4 oz Orange liqueur
- 1 barspoon Demerara syrup
- 2 dashes Angostura bitters
Stir with ice until cold, then strain.
Coupe, lemon twist.
Taste
An ounce and a half of bourbon, a quarter ounce of orange liqueur, one barspoon of demerara, two dashes of Angostura. The orange liqueur is peel and a little sugar. Stirred, coupe, lemon twist. An Old-Fashioned with curacao in the sugar slot, served up.
History
Jerry Thomas prints the Fancy Brandy Cocktail and Fancy Gin Cocktail in the 1862 Bar-Tender's Guide as the plain Cocktail strained into a fancy wine-glass, lemon on the rim and a piece of peel thrown on top. Wayne Curtis, in Imbibe, notes that the difference is mostly the glass. Thomas's later Improved Cocktail is the one that adds maraschino and absinthe; the version here is the older fancy, whiskey with a splash of orange liqueur rather than those. This menu pours an ounce and a half of bourbon, a quarter of orange liqueur, a barspoon of demerara, two dashes of Angostura, coupe, lemon.
