Two ounces of cachaça, three barspoons of sugar, an ounce and a half of lime, muddled and dumped with the ice. The lime is juice and hull. Grassy cane, pith, and sugar. Rocks with ice. It sits.

History

The Caipirinha is Brazil's national cocktail: cachaça, lime, and sugar, muddled, ice dumped in. The name is a diminutive of caipira, a person from the countryside. It was a countryside drink before it was a bar drink; the twentieth century brought it to the cities and then to the IBA list. This menu pours two ounces of cachaça, a tablespoon of sugar, and an ounce and a half of lime, shaken and dumped, no strain.
