- 2 oz Light rum
- 3/4 oz Lime juice
- 1/2 oz Simple syrup
- 1 barspoon Campari
Shake hard with ice, then strain.
Coupe.
Taste
The Daiquiri's two ounces of light rum and three-quarters lime, with only a half ounce of simple, then a barspoon of Campari. That barspoon of Campari is a bitter orange film. Pink at the rim, dry at the back. Coupe.
History
John Lermayer mixed The Rum Drink at Sweet Liberty in Miami Beach; Eater printed it in March 2016: two ounces of white rum, three-quarters lime, three-quarters simple, one spoon of Campari, shaken, coupe. Kevin Armstrong's Dry Daiquiri, at London's Match Bar in 2005, is an earlier Campari Daiquiri, with passion fruit syrup in the mix. This menu keeps Lermayer's name, rum, lime, and barspoon of Campari, and cuts the simple to half an ounce.
