Mezcal, built
Mezcal Mule
Barline 2,h,t,HLw
The code is the shorthand off my printed menu; the Key tab decodes every letter.
- 2 oz Mezcal
- 1/2 oz Lime juice
- top with Ginger beer
Build in the glass over ice, then lift once with a barspoon.
Highball, iced, lime wheel.
Taste
Two ounces of mezcal, half an ounce of lime, and ginger beer over ice. Smoke and ginger are both loud and they hold each other up; the lime keeps the middle clean. Agave all the way down, under a lime wheel.
History
The Mule template took a Mexican spirit early. Difford's files the tequila version as the Mexican Mule, also called El Burro, and the mezcal version is the same build with the smoked agave in the spirit slot. Nothing is on record about who poured the first one. It dates from the 2000s, when mezcal reached American back bars. Two ounces of mezcal, half an ounce of lime, and ginger beer go over ice here, with a lime wheel.
