Taste

Equal ounces of aged rum, Campari, and sweet vermouth, over ice. Rum in the gin slot puts molasses and overripe fruit where juniper was, and the Campari has to push through that instead of sitting beside it. The cube gives up water slowly, so it rounds off as it stands. Rocks with ice, orange twist.

History

Joaquín Simó built the Kingston Negroni at Death & Co in New York's East Village in late 2009, the day the importer Eric Seed walked in with a bottle of Smith & Cross, a navy-strength pot-still Jamaican rum. He reached for Carpano Antica for the vermouth, on the grounds that Smith & Cross is no shrinking violet and needed a vermouth that could stand in front of it. The drink went on the Death & Co menu in spring 2010, was on the list at Rickhouse in San Francisco by that autumn, and was printed in the bar's 2014 book. The version here is an ounce each of aged rum, Campari, and sweet vermouth, stirred, rocks with ice, orange twist.
