Equal ounces of gin and dry vermouth, a fifty-fifty Martini, with a half ounce of elderflower as the sweet. No juice, no bitters. Shaken, so it clouds a little. Coupe, olive. Floral gin, dry wine, and a brine finish.

History

Harry Craddock's 1930 Savoy Cocktail Book prints an Olivette Cocktail of Plymouth gin, absinthe, orange bitters, and syrup, with an olive; that is not this drink. This menu's Olivette is gin, dry vermouth, and elderflower, the formula St-Germain publishes as a house cocktail: equal gin and Noilly Prat, half an ounce of the liqueur, green olive. St-Germain itself dates to 2007. Dante in New York bottles a related Olivette Martini with both vodka and gin. This menu shakes the St-Germain pour and keeps the olive.
